Raw Vegan Pesto

I have been looking forward to this one for a while. I love pesto. And making pesto is so easy. This recipe is going to be family size.

You can use whatever noodles you like but since I’m doing a raw food challenge I’ll be using Zoodles.
For the pesto sauce you will need a food processor or blender.


What you will need:

6 zucchinis for the zoodles

1 zucchini for the pesto

2 handfuls of arugala, spinach, or power greens blend

2 avacados

Sea salt

Lemon or lime juice

Basil leaves

Avacado or grapeseed oil

1 shallot

Optional add ins: shelled sunflower seeds or pine nuts and or sun dried tomatoes.

If they dont have fresh basil look for for these. The herb section of your grocery store.

Blend this together and mix into your zuchinni noodles. Add sliced grape ot cherry tomatoes for garnish.

When choosing zucchinis in the store look for medium to small ones because with zucchinis bigger is not always better. Make sure its not too soft either.
